Usually, at least on a Levi's jacket, the collar is folded over and sewn to the back and inside of the jacket. You can cut the collar off halfway with scizors, and then use an X-Acto knife to slice the threads that hold it to the actual jacket. Yeah I recommend doing what Dante suggested as well to keep it from fraying, since the collar is structurally important to the jacket.
I kept my collars, it's great for when it gets COLD, keeps the damn wind off yer neck. Or you can always tuck them inside your jackets so they rest on your shoulder (there might be an ideal way of keeping there without hard/bumpy snaps.)

I used blue bias tape to avoid fraying and to strengthen the shape of the neck area. Worked like a charm!
