Nosferatu with the intro by Coroner is my all time favorite instrumental. Earthquake from Electric Sun is pretty spectacular as well. Other favorites would be Grapes of Wrath by Rage, Merciless Onslaught by Metal Church, Thrash Attack by Destruction, March of the Crabs by Anvil, Dr.Phibes by Angel Witch and Endtime by Trouble.
It's not technically a true instrumental since it's got a brief spoken word part, but Descending Curtain of Death is an amazing Death Metal song I recommend listening to (if you haven't already).
Was listening to morbid angel "blessed...." the other day...the instrumentals on that album are fantastic..."doomsday celebration" always makes me think of some horrible battle between otherworldly creatures in a wintry setting and the Richard brunelle penned "desolate ways" is one of the most beautiful acoustic guitar pieces I've ever heard. The closing piano bit "in remembrance" is nice as well....they all add so much to make listening to the entire album a magical experience! Still my favorite death metal album.
Love "The Minds Eye" - Dark Tranquillity, as well as Testament's "Musical Death (A Dirge)" - even better having witnessed Alex and Eric play this live! And of course "Christendom" by Paradise Lost!
I like middle eastern themes. Nile's instrumentals fantastic. The first song of Nervecell's album Psychogenocide is great too, and Melechesh has some nice instrumentals.

Nosferatu is an unbelievable song. I mean, that is just pure air guitar bliss right there man. It sounds like metalized European Classical music!
Dr. Phibes is short but sweet and I've always been a huge fan of Thrash Attack. The latter is a song I'd love to hear live.
